What's For Dinner

Tonight I making a spicy orange tofu stirfry. Mmmmmm. . .I'm thinking it may turn out even better than Happy Dragon's!
Ingredients:
2 cups brown rice
1/2 teaspoon salt
2 teaspoons minced garlic
1 teaspoon crushed red pepper
1 12oz package extra firm tofu
1 teaspoon grated orange rind
1/2 cup fresh orange juice
2 tablespoon cornstarch
4 tablespoons low-sodium soy sauce
2 teaspoon dark sesame oil
1 1/2 cup (1-inch) slices green onions
1 box frozen broccoli

Directions:
Cook rice according to package directions
Fry tofu in wok until crispy on the outside
Combine garlic, pepper,broccoli, and tofu, tossing well.

Combine rind, juice, cornstarch, and soy sauce, stirring with a whisk.

Heat oil in a large nonstick skillet or wok over medium-high heat. Add tofu mixture and onions; sauté 2 minutes. Add juice mixture; cook 2 minutes or until sauce thickens, stirring frequently. Serve beef over rice.

Your can find the original recipe at Myrecipes.com but I modified it for extra sauce and to make it vegetarian instead of beef.

I have to admit, I'm not a big fan of tofu.
But this sounds like it would be DELICIOUS with chicken! :)
