
I found the basics of the sauce in a recipe for something else. Unfortunately I wasn't too crazy about the other dish as a whole but then it hit me on the head that the sauce would be fantastic by itself over cold soba noodles! The reason why I love this sauce is because it has a great balance of the sweet/ spicy tastes. It isn't sweet enough to be a dessert and yet it isn't spicy enough to make you want to drink Lake Erie. I also love the flavor or limes and it is hard to find good recipes that incorporate lime in a good way. Anyway, here is the sauce:
Combine 1/2 cup lt brown sugar, 1/3 cup lime juice (preferably fresh squeezed), 1/4 cup soy sauce, 4 garlic cloves minced, and 1 green jalapeno seeded and minced in a small saucepan over low heat. Cook until the sugar is dissolved, remove from heat and cool. Cook 12-16 ounces of soba noodles according the package directions. After rinsing noodles in cold water toss with a little less than 1/4 cup neutral oil then add the dressing, toss, cool, and serve.

Dude, I have a buttload of limes left over from our July 4th cookout. (For drinks, at that time.) I am so making this tomorrow.

Okay, we just tried it tonight. Honestly, it was a little too sweet and a little too tart for me. And I coulda used more heat, but that could have just been a quirk of my pepper. I think if I tried it again, I might try to stir in some peanut butter or something. But Michael liked it a lot, so it's all likely my bad taste! :-)
Now that Michael. . .he has good taste! You could add a pinch of cayenne for more heat or use a red chili pepper. The sweet and the tart is what I loved about the sauce.
