This spring I planted a few cucumbers in the back garden. One of the plants died by the beginning of June and the other two were just straggling along and I really didn't think much would come of them. What seemed like overnight, the two remaining cucumber plants climbed up the little trellis I had for them and began to overtake the fence. Not only that but there are a ton of flowers on the plants a already a bunch of cucmbers. I picked the first two yesterday and they are gargantuan! My question is what in the world am I going to do with all these cucumbers? I did do some reading on pickling and that is just a monstrous task. You really can't make cucumber bread like you can with zucchinis (or can you?) and I can only eat so many salads with cucumbers on them. This is why I need your help. What is your favorite cucumber recipe? I need ideas on what to do with these.

I recently made pickles for the first time (solo--I used to help my mom many years ago). The recipe I chose is great for anyone with a job. It was a little time each night for four nights. Granted, the fourth night was a little time consuming, but I had the world's 2nd longest movie (Casino Royale) playing while finishing up. Give pickling a try, you might enjoy it!
Well I load up my tabbouleh with way too many cucumbers. But I'm a freak for them and prefer them to many other snacks. Awesome if you just seed them, cut them into long strips and sprinkle them with lemon juice, cumin, and a little ground red pepper.
Webbie- I am still just a bit too intimidated by the whole canning process. I know I should just go for it but a little part of me is still hesitant. Who knows, I may end up doing it sometime after the cucumber fest really gets under way.
Scot- I never thought of putting cucumbers in tabbouleh. . .I may just have to try that out.
