Every weekend I post a Recipe Roundup which is a collection of recipes I've read on various blogs or sites that I want to make. It is sort of a digital reminder of all the yummy food that is out there for me to try. Intentions being what they are I haven't made any of them yet, except for one. I had a couple of zucchini from my garden and I remember seeing a recipe at Simply Recipes for zucchini muffins. Chris loves zucchini bread but not necessarily zucchini itself so I decided to try these muffins out and see what he thought of them.
Wow! Can I just tell you that these muffins are simply amazing. I split the batch in half and added raisins to one half and left the other half uncontaminated by raisins for Chris. The recipe says you'll get about 12 muffins but I actually got 18 out of this batch. . .enough to give some away! There are two things that I love about this recipe. The first is that you don't need a mixer to make it, a wooden spoon will do just fine. The second is the addition of nutmeg to the batter. Just that 1/4 tsp of nutmeg really helps to add a dash of nutty spiciness that stays in the background augmenting the smooth sweetness of the rest of the muffin.
I'll tell you what, as soon as I get more zucchini in the garden I am making another batch of these beauties!

So glad you liked the muffins! I thought they turned out rather well myself. Anything that can help use up some the zucchini from the garden is a good thing.
Ain't that the truth! It's a good thing I love zucchini in all forms. I'm glad you mentioned putting the raisins in there because I never would have thought of that. How do the cranberries taste in it?
